Just so you know this is the BEST grilled chicken you will EVER eat. Well at least that's what the three other people who have tried it so far have told me. And we've cooked this meal three times in the last week...so here's the story:
The Lazy Man was hungry and out of food one day, but he managed to find a 1lb can of government pork hiding in the cabinet and decided to make some kind of meal. So he mixed in some Sticky Fingers Carolina Classic BBQ sauce and wah-la, a pretty tasty canned meat sandwich. A few days later I bought some chicken breast tenders and was trying to come up with a tasty way to cook them and then it crossed my mind to slap some Sticky Fingers BBQ sauce on 'em and cook them on the grill. I then remembered John Eargle, the best wild game cook around these parts, wrapping bacon around some dove kabobs he had made and they were terrific, so I decided I would also wrap these tenders in bacon. The final thought I had resulted in wrapping the tenders in bacon, cooking them on the grill with Sticky Fingers BBQ sauce, and then topping them with cheddar cheese before serving. Tips for this meal:
- You MUST use Sticky Fingers Carolina Classic BBQ sauce. It is one of the best BBQ sauces in the world. If you don't like it after you try it the first time, then substitute with your favorite BBQ sauce. (Most grocery stores or a Wal-Mart will carry Sticky Fingers sauce)
- Bacon, Bacon, Bacon. Don't forget the bacon. Gwaltney Applewood Smoked bacon tastes great with these, but any bacon should suffice.
- Cheddar cheese goes the best with the bacon but you could substitute with your favorite cheese.
- Cook on the grill over medium heat and don't add BBQ sauce until you flip the chicken the first time. Otherwise you'll ending burning the sauce. Baste sauce on with brush or slop it on with a spoon.
- You could also use chicken breast fillets for bigger portions but we prefer the tenders for the most flavor.
- Spice: before wrapping in bacon, rub some olive oil, paprika and sweet red pepper seasoning on chicken for an extra "kick."
- Low-Carb and Atkins approved as long as you don't overdo the BBQ Sauce.
