Skinny Man's Tacos (Low-Carb)

Well the Lazy Man has decided to go on a low-carb diet to shed some pounds so that has forced me, the School Teacher, to do some extra thinking in the kitchen. So I wanted taco's a couple nights ago and of course old-fashioned taco's aren't in the Lazy Man's new diet so we came up with the Skinny Man's Tacos. In simple terms it comes out to be a Taco Salad without any shell but dang if it ain't tasty.

Tips for this meal:

  • Drain the grease after you brown the meat. Don't think you can't forget because I did one time. Otherwise your tacos will end up tasting like hotdog chili.
  • Onion, Bell Pepper, Sweet Red Pepper Seasoning, and a dash of fajitas seasoning really add a lot to some already good Old El Paso Taco seasoned meat. But all of these are optional. We use bottle form fajitas seasoning and McCormick Red Pepper seasoning.
  • Cheese and Sour Cream definitely tops this meal off pretty good and make your salad a lot better.
  • Try substituting chicken instead of beef if you don't like all the fatty hamburger. Use can chicken if you really want an easy way out.
