Herb Crusted Baked Chicken w/ Mushroom Sauce

















Tips for this Meal:

  1. You can season the chicken with any Italian seasoning you'd like. We prefer Rosemary or an Italian Season mix that you can buy at your local grocery store.
  2. Bread crumbs are optional if you are watching the carbs but they definitely add to dish.
  3. Serve this chicken over white rice with the mushroom sauce on top. You could also cut the chicken up after done baking and serve over some kind of pasta.
  4. If you like a crunchy crisp crust, turn the oven to broil a couple minutes before the chicken is done baking and brown the top to your desired crispiness.

New Recipes Coming

Sorry for the delay...the Lazy Man and I have been busy trying to get together several recipes and will post them soon. The problem we seem to be having is forgetting to measure our ingredients when we make a recipe. One thing you'll discover the more you cook is that you begin to just throw things together and season everything to taste and it ends up tasting marvelous. Plus we are two guys, and everyone knows guys don't like reading directions and that would include recipes. So we'll try our best to guesstimate the approximate amount of the ingredients we use in our recipe and hopefully when you decide to make the meal it will turn out great.


Sidnote: We cooked Hug-it-Out Chicken, Hug-it-Out Cheese Bread, Salad, and Peanut Butter Pie for 10 people yesterday and it seemed to pass the taste-test once again. You just can't beat the Hug-it-Out Chicken. If you'd like for us to fix you and your family or significant other a private meal...we are certainly for hire. Remember...we are broke! Skinny Man's Tacos (Low-Carb)

Well the Lazy Man has decided to go on a low-carb diet to shed some pounds so that has forced me, the School Teacher, to do some extra thinking in the kitchen. So I wanted taco's a couple nights ago and of course old-fashioned taco's aren't in the Lazy Man's new diet so we came up with the Skinny Man's Tacos. In simple terms it comes out to be a Taco Salad without any shell but dang if it ain't tasty.

Tips for this meal:

  • Drain the grease after you brown the meat. Don't think you can't forget because I did one time. Otherwise your tacos will end up tasting like hotdog chili.
  • Onion, Bell Pepper, Sweet Red Pepper Seasoning, and a dash of fajitas seasoning really add a lot to some already good Old El Paso Taco seasoned meat. But all of these are optional. We use bottle form fajitas seasoning and McCormick Red Pepper seasoning.
  • Cheese and Sour Cream definitely tops this meal off pretty good and make your salad a lot better.
  • Try substituting chicken instead of beef if you don't like all the fatty hamburger. Use can chicken if you really want an easy way out.

Hug-It-Out Chicken aka Bacon-Wrapped BBQ Grilled Chicken

Just so you know this is the BEST grilled chicken you will EVER eat. Well at least that's what the three other people who have tried it so far have told me. And we've cooked this meal three times in the last week...so here's the story:

The Lazy Man was hungry and out of food one day, but he managed to find a 1lb can of government pork hiding in the cabinet and decided to make some kind of meal. So he mixed in some Sticky Fingers Carolina Classic BBQ sauce and wah-la, a pretty tasty canned meat sandwich. A few days later I bought some chicken breast tenders and was trying to come up with a tasty way to cook them and then it crossed my mind to slap some Sticky Fingers BBQ sauce on 'em and cook them on the grill. I then remembered John Eargle, the best wild game cook around these parts, wrapping bacon around some dove kabobs he had made and they were terrific, so I decided I would also wrap these tenders in bacon. The final thought I had resulted in wrapping the tenders in bacon, cooking them on the grill with Sticky Fingers BBQ sauce, and then topping them with cheddar cheese before serving. (Prep Time: 20 mins, Cost: About $10, Feeds: 4)

Tips for this meal:
  • You MUST use Sticky Fingers Carolina Classic BBQ sauce. It is one of the best BBQ sauces in the world. If you don't like it after you try it the first time, then substitute with your favorite BBQ sauce. (Most grocery stores or a Wal-Mart will carry Sticky Fingers sauce)
  • Bacon, Bacon, Bacon. Don't forget the bacon. Gwaltney Applewood Smoked bacon tastes great with these, but any bacon should suffice.
  • Cheddar cheese goes the best with the bacon but you could substitute with your favorite cheese.
  • Cook on the grill over medium heat and don't add BBQ sauce until you flip the chicken the first time. Otherwise you'll ending burning the sauce. Baste sauce on with brush or slop it on with a spoon.
  • You could also use chicken breast fillets for bigger portions but we prefer the tenders for the most flavor.
  • Spice: before wrapping in bacon, rub some olive oil, paprika and sweet red pepper seasoning on chicken for an extra "kick."
  • Low-Carb and Atkins approved as long as you don't overdo the BBQ Sauce.

Spicy Stir Crazy Chicken w/ Broccoli & Rice

This meal was created one night when there wasn't much left in the 'fridge or the cabinet. All that could be found was chicken breast fillets, frozen broccoli and some government chicken seasoning & rice. Out of that the Spicy Stir Crazy Chicken was born. (Prep Time: 20-30 mins)

Tip for this meal:
  1. Don't over-cook chicken. Who likes tough chicken?
  2. Add broccoli when chicken is 3/4 done or it will over-cook.
  3. Buy a chicken rice pack from store. Lipton Sides are wonderful and cheap.
  4. Season to taste. Maybe you just want Stir Crazy and not the Spicy. Just leave out the Cheyenne, Black Pepper and Salsa.
  5. Salsa is optional for sure. We just threw some in for fun, thus the crazy part. In fact is was Peach Salsa and the Lazy Man tossed some in to add a little sweetness.
  6. Customize. Add or take away as you like. Make it as spicy and crazy as you'd like.

Wesson's Pork Spinach Alfredo

The first dish that was created in the Poor Boy's home was soon to be called Wesson's Pork Spinach Alfredo. It sounds like a fancy dish you might find at the Olive Garden, but it is simple enough for anyone to cook in their home and only costs around $10 to feed four healthy people. Of course you may want to have something to serve along with this meal, but again this is the Poor Boy's cookbook, so we are trying to save you some money. However Wesson's Cheese Bread(coming later) and a nice salad would go along terrific with this dish. If you wanna impress the lady with a home cooked Italian meal...this one's for you! (Prep Time: 40 minutes)

Tips for this dish:
  1. Cheese, Cheese, Cheese. Gotta have the Moz. and Parm. cheeses.
  2. Alfredo Sauce- to save money and time just pick up 2 jars of your favorite Alfredo sauce from the store.
  3. Drain, Drain, Drain. You have to drain the Spinach very well. Otherwise it will overpower you sauce and it will taste like the green goo it looks like.
  4. Don't over cook Pork. You can begin step 2 when pork is 3/4 done.
  5. Don't overcook Mushrooms. Add mushrooms when onions are 1/2 done.
